Taleggio is an Italian cheese made from raw cow's milk, with a unique sweet aroma and spicy taste. Its production has ancient origins, originating from the need of Val Taleggio residents to use excess milk for direct consumption. Initially known as "stracchino," the cheese was made with evening milkings when cows were tired after a day of grazing.
The name "Taleggio" dates back to the early 20th century when cheesemakers from the valley sought to distinguish their cheese from those produced in other areas. The work of Amilcare Arrigoni, who emigrated to France in the catering sector, contributed to the popularity of Taleggio. In 1988, the cheese received the Protected Designation of Origin (PDO), followed by the Protected Geographical Indication (PGI) in 1996.
Production of Taleggio
The production of Taleggio has undergone several innovations over the years, while remaining loyal to traditional methods. The cheese factories associated with the Consortium for the Protection of Taleggio Cheese (CTT) play a role in monitoring and controlling the marketing and enforcing the requirements specified in the production guidelines.
Producers use only raw cow's milk from cows raised in regions defined by the guidelines. The curd is heated for several minutes and then stirred to allow the separation between the curd and whey. Taleggio forms are then allowed to age in controlled temperature and humidity cells for at least 35 days.
Protected Designation of Origin
Taleggio is a cheese with a Protected Designation of Origin (PDO), which means it can only be produced and aged in certain Italian regions, including Lombardy, Piedmont, and Veneto. The Consortium for the Protection of Taleggio Cheese (CTT) conducts careful monitoring activities to ensure the correct use of the "Taleggio" denomination.
The shape of Taleggio is characteristic: a square shape with a weight of approximately 2.2 kg. The production guidelines also specify requirements for aging and storage to guarantee its quality.
