Centallo has a very ancient history dating back to the Roman era. In the Middle Ages, the territory was contested by various powers including Saluzzo, Cuneo, and the Savoy. In the sixteenth century, the town became a very important strategic center during the clashes between the French and the Spanish on the territory of northern Italy. With the sieges, Centallo also became the object of poetry and culture, so much so that Torquato Tasso took care of the "liberation" of Centallo by the Spanish troops coming to the aid of besieged Cuneo and Fossano by the French. The town has become famous as an agricultural center.
