However, it is said that the first attestations of the toponym referred to "Canaliis Sambuci", "Canal Sambugo", "Canalis Sambuci". Later, starting from the seventeenth century, the name "Canal San Bovo" was consolidated. It is thought that the word "canal" means "valley", while the term "Sambuco" refers to the elderberry plant, although it is difficult to determine the precise meaning. In any case, the municipality of Canal San Bovo is known to have been dedicated to San Bovo, who is still celebrated as co-patron of the territory.

During the French occupation, the territory of Canal San Bovo was annexed to the Napoleonic Italian Kingdom. However, after the anti-French insurrection of Andreas Hofer and the end of the Napoleonic period, the municipality returned to being under the influence of the County of Tyrol, consolidating the bond with the Habsburg dynasty until 1918, the year of the end of World War I.
